Hearty Potato Pancakes

Potato Pancakes

These are hearty enough to be served as a main dish or as a side. They are good for any meal of the day and are very easy to make. You can serve these potato pancakes topped with apple sauce, sour cream, salsa, or any topping you desire… or just with a little salt and pepper. For a sweet twist, you can try these with sweet potatoes rather than regular potatoes!

Ingredients
4 cups grated potatoes (you can peel them if you want, but they are better left unpeeled)
2 – 4 large eggs (you can experiment with the number of eggs you like to use in this recipe)
½ cup of white unbleached flour
½ tsp. garlic powder
¼ cup finely diced onion
2 TBLSP grated Parmesan cheese

Directions
1. Preheat oven to 200 degrees
2. Mix all ingredients in a bowl
3. Heat frying pan or griddle on medium high heat and melt a little butter on it to coat
4. Spoon 1/8 cup (2 TBLSP) batter onto hot pan or griddle and spread it out to form a “pancake”
5. Cook several minutes on each side until slightly brown.
6. Place cooked potato pancakes in oven to keep them warm while you cook the rest of them.
