Wild Rice Stuffing

The great thing about any stuffing recipe is that they are very forgiving and can be altered to suit the tastes of you and your guests (or kids!). This is one of those dishes that will disappear very quickly at the holiday dinner table as diners go back for seconds (and thirds!).

Ingredients

Note: This recipe is very flexible and substitutions can be made on just about any ingredient. Amounts of each ingredient can be varied depending on number of servings.

1 cup wild rice
6 cups diced whole wheat bread
3 – 6 chopped celery ribs
1 – 2 cups walnut pieces (any other kind of nut may be used… pecans are great!)
Raisins
Dried cherries
Dried cranberries
Chopped dates
Chopped apricots
2 diced apples (Any kind of apple will do. You may even want to combine sweet and tart apples. You can peel them or not.)
(the amounts of the fruits can vary greatly depending on taste)
Just enough chicken stock to moisten
A little salt to taste

Directions:

1. Put wild rice in a large sauce pan with three cups of water and a little salt

2. Bring water to a boil

3. Reduce water and rice to a simmer and cover for 45 minutes until rice is just tender

4. Preheat oven to 350 degrees (or just use the setting you are roasting the meat at)

5. Drain rice and transfer to a large bowl

6. Add all other ingredients and mix

7. Lightly butter a large baking dish and add stuffing (Note: you may also use this to stuff a turkey or large chicken)

8. Bake for 45 minutes

This dish reheats well in a microwave.
